Sugar hide and seek

This is pretty much the only time of year I make candy. I don't really buy gifts so it's fun to give away.

Tonight I tried something new. Toffee Pretzel Bark.

I had the wrong size pretzels and I didn't put sea salt on top. I'm not on that band wagon.

And if you are going to melt the chocolate in the microwave put a teaspoon of butter per cup with the chocolate chips and stir it every 30 seconds. If you wait till the chocolate looks melted it will be burnt.

It was really interesting making toffee in the oven, you can hear it sing here. Please be really careful taking that pan out of the oven. It is not a one handed thing to do.

I myself being not all that crazy about pretzels would stick to my usual recipe for toffee. Especially since I like to put it in coffee and because you don't have to melt the chocolate, you just throw the chocolate chips onto the hot toffee. This is a lot easier:

I also made this fudge tonight:

I can't even follow my own recipe. No reason to wait to put the evaporated milk in as long as the butter is melted, I didn't let it get down nearly that far in temperature once I took it off the heat and I only put two cups of icing sugar in. You can't really go wrong with the consistency of this fudge because you just add icing sugar till it looks like fudge.

I wasn't going to go outside today but then I saw this sky and I had to go.

These squirrel pictures might make a bit more sense if you know the first Lizzy book will be hide and seek with the squirrels. But truth be told I'd take them anyway.

Harvested sap I think. No pots to make syrup or fudge with.
